| 產品介紹 | 果膠酶（pectinase）是分解果膠的一個多酶復合物，通常包括原果膠酶、果膠甲酯水解酶、果膠酸酶。通過它們的聯合作用使果膠質得以完全分解。天然的果膠質在原果膠酶作用下，轉化成水可溶性的果膠；果膠被果膠甲酯水解酶催化去掉甲酯基團，生成果膠酸；果膠酸經果膠酸水解酶類和果膠酸裂合酶類降解生成半乳糖醛酸。 |
